Ingredients:

  • For pancakes:
  • Milk 1 cup
  • Kefir 1 cup
  • Chicken egg 3 pieces
  • Salt 0.5 tsp
  • Sugar 1 tbsp. a spoon
  • Flour 7-8 tbsp. spoons
  • Vegetable oil 2 tbsp. spoons
  • For salad toppings:
  • Leek 1 piece
  • Onion 2 pieces
  • Champignons 400 grams
  • Potato 4 pieces
  • Mayonnaise 300 ml.
  • Arugula bunch
  • Filling for pancake rolls:
  • 1 carrot
  • Green onion bunch
  • Brynza Bulgarian 100 grams
  • Sour cream 3 tbsp. spoons
  • Parsley bunch
  • Salt to taste
  • To decorate the salad:
  • Kiwi 3-4 pieces
  • Fresh cucumbers 2 pieces
  • Olives 8-10 pieces

Cooking method:

Step 1. Prepare pancakes: Mix milk, kefir. Add eggs, salt and sugar. Mix well. Then add flour and stir so that there are no lumps. Add vegetable oil at the very end.

Step 2 Fry the pancakes in a hot skillet, put them in different plates and leave to cool.

Step 3 Peel the potatoes and cook until cooked. Grate the cooled potatoes on a coarse grater.

Step 4 Boil the chicken breast in salted water until tender. Cut into small pieces.

Step 5 Chop onion into small pieces. Cut champignons into slices and fry with onions.

Step 6 Chop the feta cheese, add finely chopped parsley and green onions. Salt to taste, add sour cream and mix everything until smooth.

Step 7 Then put the filling on the pancake and distribute it evenly. On one edge, lay carrots cut in thick buns, and roll it all up.

Step 8Do the same with the other pancakes. Cut the rolled pancake across into thick rolls.

Step 9 Line a deep round bowl with culinary film.

Step 10 Put the rolls on the bottom and partially on the walls of the bowl.

Step 11 Put chopped chicken on top of rolls, then grease with mayonnaise.

Step 12 Pour a little chopped leek into rings.

Step 13 Put mushrooms with onions in the next layer, followed by grated potatoes.

Step 14 Once again, coat with a layer of mayonnaise, put the leaves of arugula or any other greens. Remove the egg pancake salad for 30 minutes in the refrigerator.

Step 15 Cover the pancake salad with a large round plate and turn over quickly. As you can see, our rolls are very nicely arranged on the salad. Now you can decorate with rings of fresh cucumber, kiwi and olives.
