
Ingredients:
For the test:
- Premium wheat flour 3-3.5 cups
- Kefir 1 cup
- Butter 150 grams
- Pinch of salt
- Vanillin pinch
- Baking powder 1 tbsp. a spoon
- Chicken egg 1 piece
- Powdered sugar 1 tbsp. a spoon
For filling:
- Cherry (fresh or pitted frozen) 600 grams
- Sugar 100 grams
- Starch (potato or corn) 2 tbsp. spoons
Cooking method:
Step 1. Sift the flour. Add salt, vanilla, baking powder and sliced butter.
Step 2 Then mix the flour and butter with your hands until fine crumbs are formed.
Step 3 Pour in kefir.
Step 4 Knead soft elastic dough.
Step 5 Divide the dough into several parts. Roll each part into an oval layer 0.5-0.7 mm thick. Cut along to get two stripes.
Step 6 Pour starch with sugar on each strip and put cherries at the same distance, sprinkle sugar on top. Pinch very firmly the edges of the dough over the cherries.
Step 7 Lay the blank on parchment paper laid on a baking sheet and carefully roll it into a snail.
Step 8. Connect the next workpiece to the end of the cochlea and continue to twist around the coiled coils. Continue curling up until the dough and filling are over.
Step 9 Preheat the oven to t 180 degrees. Grease the pie with egg white. Bake for 35 minutes, until golden brown. Sprinkle the finished snail cake with powdered sugar.
