
Kharcho soup is a Caucasian beef brisket soup cooked with rice, tomato and hot spices.
Ingredients:
- Beef 500 grams
- Rice 200 grams
- Walnuts 10 grams
- Tkemali or Satsebeli sauce
- Onions 3 pieces
- Garlic 3-4 cloves
- Suneli hops 2 tsp
- Red pepper 1-2 tsp
- Black pepper peas 5-6 pieces
- Salt to taste
- Greens to taste
Cooking method:
Step 1. Wash the meat well and cut into slices. Pour with 3 liters of water, cook for 1.5-2 hours.
Step 2 Peel onions, finely chop and fry in vegetable oil.
Step 3 Grind the nuts in a blender or knife.
Step 4 Next, pour the washed rice into the prepared broth and cook for 10 minutes.
Step 5. Then add onion and chopped nuts to the broth.
Step 6 Then add tkemali sauce.
Step 7. Next add suneli hops, red and black pepper, salt to taste. Cook everything for 5-7 minutes.
Step 8 Squeeze the garlic through the garlic press, remove the pan from the heat and let it brew for 10–20 minutes with the lid closed.
Step 9 When serving, sprinkle with finely chopped herbs.
